Close your eyes and imagine yourself 40 years from now. Do the choices you’re making today make you a good ancestor to the people of tomorrow? Indigenous cultures around the world call it “seventh-generation thinking” and have been applying this logic to decision-making for centuries. Today it’s being tested by urban planners in Japan as a way to build more sustainable cities.
Ingredients:
- Olive oil (to your heart’s content)
- 2 onions, diced
- 2-3 sweet potatoes, cut into cubes
- 1 butternut squash, cut into cubes
- 1 can of diced tomatoes
- 1 can of tomato paste
- ½ tsp cayenne pepper
- 1-2 tsp turmeric
- 1 tsp cumin
- 4-5 cardamom pods
- ½ tsp saffron
- 1 tsp harissa
- 1 can chickpeas
- 3 cups of dried apricots
- 1 cup pitted dates
- Handful of parsley/coriander
- Some vegetable stock or water
Recipe:
- Heat oil in large pan, throw in onions until yellowed
- Add in sweet potatoes, butternut squash, diced tomatoes and tomato paste, as well as all spices.
- Cook for about 40 minutes on low heat, with the lid on.
- When it starts to look a bit dry, add in the vegetable stock or water
- Add in the chickpeas, apricots and dates, letting simmer for another 15-20 minutes on low heat, until all the vegetables are soft.
- Throw in the herbs & you’re good to go!
